Fairy Berry Cheesecake

A few weeks ago my incredible PA Ellen Marlow was baking with Zaza. She found this cheesecake recipe and as you can see it looks delicious and tasted even better.

Zaza had so much fun making this with Ellen, mostly because of Ellen’s magical addition at the end.

You see, kids are impatient. VERY impatient. They know what they want and they want it now. Don’t we all though?

Anyways, after making the cake it needs to set in the fridge for a few hours, which can be hard for a 4 year old to understand. So Ellen told her that if it stays in the fridge, in the middle of the night, while she’s asleep fairies come and add the berries on top so she can eat it. Zaza was sent. She was so excited to get home from the school the next day so she could eat it.

This is such a fun idea when baking with your kids. It makes it magical and special. Here is the recipe Ellen used:

Fairy Berry Cheesecake to Enchant Your Kids

INGREDIENTS

The Crust:

1.5 cups graham cracker crumbs

1 tbsp sugar

6 tbsp unsalted butter, melted

The Filling:

1.5 lbs cream cheese, at room temperature

1.5 cups sugar

5 whole extra large eggs, at room temperature

2 extra large egg yolks, at room temperature

1/4 cup sour cream

1 tbsp grated lemon zest (2 lemons)

1.5 tsp pure vanilla extract

The Topping:

1 cup red jelly (not jam), currant, raspberry or strawberry

3 half-pints fresh raspberries

Zaza with cheesecake slice

DIRECTIONS:

+ Preheat oven to 350 F.

+ To make the crust, combine the graham crackers, sugar and melted butter until moistened. Pour into a 9-inch springform pan. With your hands, press the crumbs into the bottom of the pan and about 1 inch up the sides. Bake for 8 minutes. Cool to room temperature.

+ Raise the oven temperature to 450 F.

+ To make the filling, cream the cream cheese and sugar in the bowl of an electric mixer fitted with a paddle attachment on medium-high speed until light and fluffy, about 5 minutes. Reduce the speed of the mixer to medium and add the eggs and egg yolks, 2 at a time, mixing well. Scrape down the bowl and beater, as necessary. With the mixer on low, add the sour cream, lemon zest and vanilla. Mix thoroughly and pour into the cooled crust.

+ Bake for 15 minutes. Then, turn the oven down to 225 F and bake for another 1 hour and 15 minutes. Turn the oven off and open the door wide. The cake will not be completely set in the centre. Allow the cake to sit in the oven with the door open for 30 minutes. Take the cake out of the oven and allow it to sit at room temperature for another 2 to 3 hours, until completely cooled. Wrap and refrigerate overnight.

+ To make the topping, melt the jelly in a small pan over low heat. In a bowl, toss the raspberries and the warm jelly gently until well mixed. Arrange the berries on top of the cake. Refrigerate until ready to serve.

HOT TIPS From Ina Garten:

+ Measure your springform pan. The bottom of Ina’s is 9 inches, but it says 9.5 inches on the pan.

+ Place your springform pan on a sheet pan before putting in the oven to catch any leaks.

HOT TIPS From Ellen:

+ Double the lemon zest.

+ Add an extra .5 tsp on vanilla.

+ The red berries make the cake so beautiful. You can make this any time of year but the red is so festive for Christmas and Valentine’s Day.

This recipe would be great for Easter coming up, too. So grateful for Ellen, always keeping the kids entertained in fun ways. Zaza has been so into cooking and baking lately. The other day I was SO INSPIRED by a recipe I saw on @acozykitchen that I had to go make the exact same mini strawberry sheet cake. It was so fun & therapeutic to get in the kitchen & just bake. Plus, the cake turned out SO cute, I had to share.

You may have seen me post about it on Instagram, & if you did, you would’ve seen that this cake recipe is cute, nostalgic, & PINK.

First, you should know that Adrianna of @acozykitchen has some amazing recipes. Think: pumpkin churros, veggie pizza, & tips for building a meat & cheese board. If you’re into cooking & baking OR just want to get started, I highly recommend her recipes.

Secondly, if you need a cake for any occasion- a birthday party, a dinner party, an anniversary – this cake has your name written all over it. You’ll be able to make this yourself, at home, without feeling overwhelmed, but you’ll seem like a total cake boss.

Might I also add, that this cake is absolutely delicious. It was such a hit that I saw Michael stuffing his face with 10 pieces. Even my parents came over & loved it.

This is such a cute idea for a kid’s birthday party too. Not too long ago my friend Gillian threw her daughter ( my goddaughter ) a strawberry themed birthday party. The goodie bags were little strawberry baskets & her daughter, Coco, was wearing a strawberry dress. This cake would’ve fit perfectly, so if you’re looking for a party theme… ‘strawberry’ can be very fun.

Cute, Pink Strawberry Sheet Cake:

Roasted Strawberry Puree

♡ ¾ cup sliced strawberries ( about 4 strawberries )

♡ 2 tsp granulated sugar

♡ pinch of salt

♡ 2 drops red food coloring gel ( optional )

DIRECTIONS:

+ Preheat the oven to 350 degrees F. In a small baking dish, combine the strawberries, sugar & salt. Transfer to the oven to roast for 10 minutes.

+ Remove it from the oven & transfer it to a food processor. Blend until completely smooth. Measure out 1/4 cup & set aside. ( Adrianna suggests keeping any extra puree to make cocktails – yum ).

Strawberry Cake:

♡ 1 ¼ cup & 2 tbsp all-purpose flour

♡ 1 ¼ tsp baking powder

♡ ½ tsp kosher salt

♡ ½ cup unsalted butter, at room temperature

♡ 1 ¼ of granulated sugar

♡ 1 tsp pure vanilla extract

♡ ⅓ cup milk

♡ 3 large egg whites

♡ ¼ roasted strawberry puree

DIRECTIONS:

+ Keep the oven at 350 degrees F & grease & line a 8×8-inch baking pan ( you can also use a 9 inch round pan, a 9×5 loaf pan– check both these options at 25 mins, or make cupcakes– check after 15 mins ).

+ In a medium bowl, whisk together the flour, baking powder & salt. Set aside.

+ In the bowl of a stand-up mixer with the paddle attachment ( or in a large bowl with an electric mixer ), add the butter, sugar & vanilla. Beat until light & fluffy, about 2 to 3 minutes.

+ In a measuring cup, pour in the milk, egg whites, & reserved 1/4 cup strawberry puree & whisk until combined.

+ Turn the mixer to low speed &, alternating between the dry ingredients & the liquid ingredients ( the strawberry/egg white mixture ), add the butter/sugar mixture until the batter is relatively smooth.

+ Pour the batter into the prepared baking pan & smooth it out until it reaches the sides. Transfer to the oven to bake for 25 to 32 minutes, until a skewer inserted into the center comes out clean.

+ Allow the cake to cool in the pan for about 10 minutes & then invert onto a cooling rack & cool to room temperature. This takes about an hour.

Strawberry Cream Cheese Frosting:

♡ 5 oz of cream cheese, at room temperature

♡ 5 tbsp unsalted butter, at room temperature

♡ 2 cups powdered sugar

♡ ½ tsp pure vanilla extract

♡ pinch of salt

♡ 1 tbsp heavy cream ( optional )

♡ ¼ cup freeze-dried strawberries

DIRECTIONS:

+  Using a food processor or a spice grinder, add the 1/4 cup freeze-dried strawberries. Pulse for about 1 minute until it resembles a powder. Measure out 1 tablespoon.

+ In the bowl of a stand-up mixer with the paddle attachment ( or a medium bowl using an electric hand mixer ), add the cream cheese & beat it until smooth. I like to do this or else the cream cheese frosting will have little clumps of cream cheese. Next, add the butter & beat it until smooth, about 15 seconds.

+ Add the powdered sugar, salt, vanilla extract & heavy cream. Beat for a full 2 minutes to ensure fluffy, delicious frosting.

If you want to make little strawberries on top, here’s what you need to do: add about 1/4 cup of frosting to one bowl. And then add a few tablespoons to a second bowl. We’re going to add food coloring to both of those frostings. If you don’t want to make the strawberries, you can obviously skip removing some of the frosting and just proceed with adding the powder, etc.

+ Then, add the reserved strawberry powder to the frosting and beat it one last time until combined. Add red food coloring if you want it to be more pink.

Little Strawberry Decorations:

+ Add a drop or two of red food coloring to the 1/4 cup of frosting you put in a bowl. This is going to be for our strawberries. Mix it together until smooth. Transfer it to a piping bag fitted with a #3 round piping tip.

+ Add a drop of green food coloring to the 2 tablespoons of frosting you put in a bowl. This is going to be our strawberry tops. Mix it together until smooth. Transfer it to a piping bag fitted with a #1 round piping tip.

To Decorate The Cake:

+ Add the frosting to the top of the cake & smooth it out into an even layer. Make it cute with some swoops.

+ If you didn’t do the strawberries above, no biggie. Top it with some sprinkles OR leave it as is. It’s cute.

+ To add the strawberries, pipe on hearts; they’ll end up looking like strawberries once we add the tops. Add as many as you like. Make them any size you want.

+ Pipe on two little dots at the top of the hearts to transform them from hearts to strawberries.

To Store The Cake:

+ Adrianna says: I keep this cake at room temperature on my counter. I don’t own a glass cake cover so I use a colander. This cake is delicious for about 2 to 3 days. If my way leaves you unsettled, you can always place the cake back into the 8×8-inch baking dish and cover it with plastic wrap.

Ta-da. A cute, fun, pink strawberry cake. This is a new go-to for me. The best part about this cake from @acozykitchen is that you can decorate it however you want. You could even do little ghosts or pumpkins for Halloween- sheet cakes are so fun.

Enjoy this with a glass of chilled rosé & you’re good to go.

Happy Sunday. Today I’m so excited that Neda Varbanova from @healthywithnedi is BACK!

You guys might remember her from when she came on to share her fiber-filled blueberry waffles or her cauliflower muffins & quick beauty tips– & let’s not forget the Nedi Martini.

A little backstory: When I first met Neda she was at Cipriani in New York City eating a cucumber salad, ahi tuna, & enjoying a few Nedi Martinis ( head to this post for the recipe ). It was so random- we ran into each other after following each other on Instagram. Instantly we became fast friends. Sure, she’s BEAUTIFUL! But she’s also really fucking cool too.

So cool that she even just launched a cardigan in collaboration with Raffi- it’s called The Nedi. & let me tell you it’s so good, I can’t even deal. It’s kind of like a sweater-jacket type peice that everyone needs in their wardrobe.

I have it in black  & it’s just perfect to take with you if you’re traveling this winter. But it’s also perfect for lounging at home. Or going out shopping. Or meeting friends for cocktails- like, you could literally wear it anywhere.

ANYWAY, Nedi is on The Skinny Confidential today to share her favorite fall recipes that are EASY. These are my kind of recipes- think apple cinnamon loaf, paleo pumpkin donuts ( WITH icing ), gluten-free turkey meatballs & a green goddess quinoa salad. YUM.

With out further ado, let’s welcome Neda back to the blog.

Green Goddess Quinoa Salad

This green salad with quinoa is absolutely to die for. I love a good, fresh salad with lots of veggies in it. I came up with this recipe when I was visiting my grandma in Greece this summer. I had a craving for something green, so I went to the local market to pick out vegetables. I got what they had in season at the time. This salad is extremely adaptable & can be made with whatever veggies you like. It can be served on its own or as a side to grilled chicken or halibut. ( Serves 6 ).

INGREDIENTS:

♡ 1 cup quinoa

♡ 1 bunch asparagus, steamed and cut into 2-inch pieces

♡ 2 cups broccoli florets, steamed

♡ 1 zucchini, grated

♡ 2 cups baby spinach

♡ 2 Persian cucumbers, thinly sliced

♡ 3-4 scallions, thinly sliced

♡ 1 cup cherry tomatoes, sliced in half

For the Dressing:

♡ 1 lime, juiced

♡ ½ cup water

♡ 1 cup basil leaves

♡ ¼ cup Greek yogurt or unsweetened coconut yogurt

♡ ½ avocado

sea salt to taste

DIRECTIONS:

+ STEP 1. Cook quinoa as per box directions & set aside to cool. To save time, prepare the quinoa the day before.

+ STEP 2. In a large mixing bowl, add the steamed asparagus, steamed broccoli, grated zucchini, baby spinach, cucumbers, scallions & cherry tomatoes. Toss well.

+ STEP 3. Add all of the ingredients for the salad dressing to a food processor & pulse until well combined. Pour over the salad, mix well & serve!

Gluten-Free Turkey Meatballs

These turkey meatballs make the perfect appetizer or topping to a salad or pasta. They are light & juicy. The vegetables add extra antioxidants & fiber. They are gluten & dairy free, great for those with allergies. ( Makes 35 meatballs ).

INGREDIENTS:

cooking spray

♡ 1 zucchini, chopped

♡ ½ yellow bell pepper, chopped

♡ 1 jalapeño, seeds removed and chopped

♡ 1 garlic clove

♡ 1 tbsp chives, chopped

♡ 2 tbsp parsley, chopped

♡ ¼ tsp turmeric

♡ ½ tsp black pepper

♡ 1 tsp sea salt

♡ ¼ cup almond meal

♡ 1 pound organic lean ground turkey

♡ 1 egg

Toppings:

vegan mozzarella cheese or small sized mozzarella balls

♡ cherry tomatoes

tomato sauce

DIRECTIONS:

+ STEP 1. Preheat oven to 375 F or to 190 C.

+ STEP 2. Line a baking sheet with parchment paper or silicone baking mat. Lightly spray with cooking spray.

+ STEP 3. Place the zucchini, bell pepper, jalapeño & garlic in a food processor. Pulse until they break into small pieces. Add the rest of the ingredients & pulse until well combined.

+ STEP 4. Using a cookie scooper, scoop out the meat & place the meatball on parchment paper. Repeat until the mixture is finished.

+ STEP 5. Bake for 15 minutes then take out of the oven. Top the meatballs with shredded mozzarella cheese & place back into the oven for 5-10 minutes, until the cheese starts to melt.

+ STEP 6. Serve in a serving dish that is lined with tomato sauce. Top meatballs with cherry tomatoes & enjoy.

Nedi’s Tip: The meatballs can be frozen after they have cooled & stored in freezer for up to 3 months.

Paleo Pumpkin Donuts

I used to love donuts when I was a little girl & completely cut them out of my diet when I began my health journey. The best thing about following a healthy lifestyle is that I get to recreate recipes & make them with a healthier twist. These paleo donuts are free from gluten, dairy, & refined sugar. I used monk fruit sweetener in place of sugar to keep the sugar low. Monk fruit sweetener matches the sweetness of sugar, helping you fill your kitchen with a healthy cup-for-cup alternative to ordinary baking & cooking ingredients. ( Makes 6 donuts ).

INGREDIENTS:

cooking spray

♡ 1 ¼ cup sifted almond flour

♡ 1 tsp pumpkin pie spice

♡ ½ tsp baking powder

♡ ¼ tsp baking soda

♡ 1 tbsp chia seeds

♡ 2 tbsp chocolate chips

♡ 2 tbsp monkfruit sweetener

♡ 2 eggs

♡ 3 tbsp pumpkin puree

♡ 2 tbsp coconut oil, melted

♡ 2 tbsp almond milk

♡ pinch of salt

For The Glaze:

♡ ½ cup Sukrin Icing sugar

♡ ½ tsp cinnamon

♡ 2 tbsp almond milk

DIRECTIONS:

+ STEP 1. Preheat oven to 350 F or 175 C.

+ STEP 2. In a large bowl sift the almond flour using a fine mesh strainer. Add in the rest of the ingredients & mix until well combined.

+ STEP 3. Lightly grease the donut molds with cooking spray. Pour in the mixture evenly into the forms.

+ STEP 4. Bake for 12-14 minutes.

+ STEP 5. Set the donuts aside to cool for 15-20 minutes.

+ STEP 6. Combine the powdered sugar, cinnamon & almond milk. Mix well, add more almond milk if needed. Dip the donuts in the mix on one side & place on a cooling rack.

Apple Cinnamon Bread

This homemade apple cinnamon bread is the ultimate comforting dessert for fall. I chose to make this recipe with monkfruit sweetener to keep the glycemic index low. If you don’t have monk fruit at home, honey or coconut sugar can be used as well. Serve this apple bread with a cup of your favorite tea & enjoy freshly baked out of the oven. It can be stored on the counter for two days or in the fridge for five days. The bread can also be frozen & stored in the freezer for three months. Make sure to let it cool completely, place in a Ziplock bag & in the freezer. ( Serves 8 )

INGREDIENTS:

cooking spray

♡ ¼ cup Swoon liquid monkfruit or honey

♡ ⅓ cup coconut oil, melted

♡ ¼ cup organic almond milk

♡ 2 tbsp coconut butter, melted

♡ 2 eggs

♡ 1 tbsp vanilla extract

♡ 1 large organic apple, chopped

♡ ¼ cup cranberries

♡ 1 ½ tsp cinnamon

♡ ¼ cup monkfruit sweetener

♡ 2 cups almond flour

♡ 1 tsp baking powder

♡ 3 tbsp chopped walnuts

Crumb Toppings:

♡ 4 tbsp monkfruit sweetener

♡ 1 tsp cinnamon

♡ ¼ cup almond meal

♡ ½ cup chopped walnuts

♡ 3 tbsp coconut oil, melted

For The Glaze:

♡ ½ cup Swerve powdered sweetener

♡ 1 tbsp organic almond milk

♡ 1 tbsp Swoon liquid monkfruit or honey

DIRECTIONS:

+ STEP 1. Preheat oven to 350 F or 160 C. Lightly spray a 9×5 inch loaf pan with cooking spray & set aside.

+ STEP 2. In a mixing bowl, add the liquid monk fruit, coconut oil, almond milk, coconut butter, eggs, & vanilla extract. Whisk with a fork.

+ STEP 3. In a separate bowl, whisk together the chopped apple, cranberries, cinnamon, monk fruit, almond flour, baking powder & walnut.

+ STEP 4. Scoop the batter into the loaf pan & spread the crumb toppings on top.

+ STEP 5. Bake for 45-50 minutes, until a toothpick inserted into the center comes out clean. Allow the bread to cool in the loaf pan.

+ STEP 6. In a small bowl, whisk together the powder sweetener, almond milk & honey ( or monk fruit sweetener ). Drizzle the glaze over the loaf & let it set. Remove the loaf from the pan & slice.

I love sweets. But to be honest, I’d rather have a piece of sourdough toast over anything. So when it comes to candy, I’m very specific, maybe even too high-strung about the ingredients in. I’m not someone who will sit there and eat a bag of peanut M&M’s because I balance my diet like a cheque book, & the sourdough with French butter & Fleur de Sel is more important to me.

Over the years I’ve tried so many different natural candy brands & I’ve narrowed it down to these 3 standouts that I know you guys will be obsessed with. The reason I know this is because I’ve tested them on my husband & he has replaced his nasty ass Snickers with these 3 candy brands. He requests these 3 natural candies now & I hope that when the baby comes he/she doesn’t come out with Michael’s Snickers sweet tooth. LOL.

This ‘candy’ is so delicious. It has 20 organic super foods & it also has real shredded coconut pieces. Not a licorice fan, but am a total fan of this licorice. Well, I guess because it’s not real licorice. The peach ones are my favorite & I love to mix them in with popcorn ( light butter with some salt please ). The pomegranate ones are delicious mixed in with some mini dark chocolate chips. These aren’t long & stringy like Red Vines, they’re tiny bite-sized pieces that you can just pop in your mouth. We want to show up tomorrow with a cake or something festive. But in reality who has time to bake 3 cakes? I sure don’t.

Well I just solved this problem for you. Eer, well actually Kris Jenner did.

Let me explain. Last week I was watching Keeping Up With the Kardashians. You know the one where Kris & Khloe have a bake-off? Missed that one? Oh, well it was a good one. Anyway, they have this whole bake-off & Kris makes her famous cake. A cake she’s been making for 20 years. Actually she even is said to have made it for Lamar Odom weekly when he was married to Khloe, #TBT. AND IT’S A LEMON CAKE!

Of course you know how I love lemon so my ears perked up from my laptop. Khloe gives her so much shit because this famous cake she bakes is out of a box. Well two boxes, actually- but we’ll get to that.

Listen, I am a busy bitch so something like this is right up my alley. I like Kris’ style. She does it all & bakes an insane, delicious, famous lemon cake? I want IN.

Like I love the whole juggle of the situation.

So I investigated. I do what I do best. Remember when I found their tea? Or how about those damn salad bowls? I’m all about the dig.

AT FIRST all I could find was Kris saying “fresh eggs & fresh oil, duh.” I LIVE. But I dug deep into the deep, dark web & found one measly article on Kris Jenner’s famous lemon cake.

If you follow along on IG Stories & Snapchat you know I made FOUR CASUAL LEMON CAKES last night. So look at me- Suzy Fucking Homemaker ready to show up to Christmas with my hands full of cakes for everyone. Not boring cakes either…TASTY, buttery soft lemon cakes! You know my relationship with lemon!! This is the perfect yearly tradition for me!

Who gives a shit if it’s out of the box?

Ok, Khloe does. But I sure don’t! I’m more of a Kris than a Khloe anyway. You?

Moving right along.

This is a “recipe” I can give you the night before Christmas & you can pull off.

WHY? BECAUSE it’s a total GET SHIT DONE CAKE. The “recipe” is easy & no one will know.

Well, I guess some people will know because my Dad reads my blog. Shit.

Anyway, you don’t have all day so let’s get to the easiest recipe in the world? Alright: first things first- it’s basically Duncan Hines Lemon Supreme Cake Mix, JELLO lemon instant pudding mix ( this is the SECRET ingredient I feel ), vegetable, eggs, & milk. There’s a glaze too, made with powdered sugar, & lemon juice. YESSSS.

Let’s get exact though, according to the Duncan Hines site:

KRIS JENNER’S FAMOUS LEMON CAKE

+ Makes 12-16 servings

♡ 1 package DUNCAN HINES SIGNATURE DELICIOUSLY MOIST LEMON SUPREME CAKE MIX

♡ 1 package lemon instant pudding Mix ( 4 serving size )

♡ 1/2 cup vegetable oil

♡ 1 cup water

♡ 4 cage-free eggs

+++ GLAZE: blend 1 cup powdered sugar w/ either 2 tbsp. milk or 2 tbsp. lemon juice ( use juice of 3 lemons- we like it tart )

+ directions: Preheat oven to 350 degrees. Blend all ingredients in a large bowl; beat at medium speed for 2 minutes. Bake in a greased & floured tube pan, 10″ or fluted at 350 degree for 45-55 minutes, until center springs back when touched lightly. Cool right side up in pan for about 25 minutes, then invert onto serving plate. GLAZE: Poke holes in the cake and then drizzle.

* note: I multiplied the recipe x 4 because I made 4 cakes- my fam, Michael’s, a friend, & Michael’s aunt!

& this my friends, is how you get shit done like Kris J.

Just wanted to get this up for you guys before tomorrow because it’s totally doable to whip up in seconds. I feel like every Ralph’s on the planet has the ingredients too.

I’m just at DryBar, multi-tasking as usual. Blowout, work, some champagne— & yes, don’t be jealous that my four famous cakes are already made.

It’s totally a yearly tradition now.

YES, she really is. And – AND !!! – you know what else is cute? YUMEARTH candy! I know, you’ve seen me brag about it on IG Stories & Snapchat but it’s one of those things I eat so frequently that I decided to share it on the blog. The candy is so on brand for The Skinny Confidential & I know the second your lips touch the peach licorice you will be bragging too. So there you go! Just being real.

( Do note that when you find yourself bragging about the organic watermelon, lemonade sour twists, I warned you. You can’t stop eating this candy- sorry in advance ).

This candy is my personal favorite ever.

Once you get your hands on it, you will see!

And maybe, just MAYBE – because you know I don’t say this unless I REALLY am into it, guys- you will let your boyfriend/girlfriend have a piece. Probs not though.

Here’s how I incorporate my favorite candy into my life:

So it’s like everywhere technically?

( I am PARTICULARLY fond of their peach licorice, post-freezer if we’re getting specific ).

AND SINCE WE’RE GETTING SPECIFIC- which we usually always do- I set this situation up to inspire you for your next holiday get-together.

I wanted the vibe to very much scream CANDY LAND.

Remember that movie? Or was it a board game?…or both?! Whatever it was reminds me of a land full of candy! Like the streets are paved in rainbow gum drops! Grandma’s house is made of chocolate! There’s a peppermint stick forest & a gingerbread plum tree! You get it.

This set-up is perfect for anyone who’s looking to do something fun for kids. But to be real Michael came home & stuffed his face with the gummy bears so you could set this up for a significant other too. Friends & family coming over? Got you covered.

What I did here is simple & something that anyone & everyone can throw together in 10 minutes because YOU KNOW HOW I ROLL.

WE G2G, so the quicker the better!

But still keeping it Instagrammy.

THE SKINNY CONFIDENTIAL’S 5 SECOND HOLIDAY CANDY LAND Soirée:

♡ ORGANIC CANDY:

Can’t have a Candy Land shindig without candy, duh! YUMEARTH

Important: this stuff is OBSESSION level for me. It’s not even funny how good the peach licorice is— so shop accordingly. The candy contains no egg, no soy, no gluten, no milk, no tree nuts, no shellfish. All the candy is organic and non-GMO. A lot of the products are vegan too.

That being said, this is probably the first candy I think I’ve ever heartily endorsed. Woo-HOO!

There’s nothing better than sneaking this into the movies. And I’m telling you, it will NOT disappoint for an adult get-together OR a kid’s party. That’s right, guys- kids & adults will LOVE.

PLUS the candy steers clear from artificial ingredients.

Also be sure to try the sour twists, insane lollipops ( don’t mean to brag but I was eating a hot chili mango lollipop today ), & SOUR beans. Sometimes they’re fun to add to the freezer before you serve them too. Not ONLY do they carry peach licorice, they also have POMEGRANATE AND STRAWBERRY LICORICE!!!!!! LIKE!!! WHAT!!!

Anyway, when you’re serving it- have fun with it! Display the candy in pretty little bowls for guests.

♡ CHAMPAGNE & CANDY-THEMED COCKTAILS:

Always champagne! Obviously serve kids ginger cider ( yes, this is a thing & kids love it! ) so the kids feel like they’re in on the fun. If it’s an adults-only party- which HEY!- I’m very much about- serve chilled champagne. I feel like you don’t need much detail here. Champagne is kind of an essential at holiday parties. Add pomegranate seeds to the champs to keep it holiday-ish. The champagne pictured is from We Drink Bubbles & it’s absolutely divine, guys! They have a monthly BUBBLES CLUB– imagine that, bubbles sent straight to your door every month. Into it!

ALSO you could do colorful, hard alcohol drinks like: caramel apple martinis, peppermint martinis, even CANDY MARGARITAS!! REMEMBER when I made candy margaritas?? Keep your theme strong here.

♡ CUPCAKES:

I actually did store-bought here. You know I’m not the best at time management so having the cupcakes ready & willing was ideal for me. If you have kids, let the kids decorate the cupcakes with candy. YUMEARTH is PERFECT for this because it’s pretty, not overly sweet, & it’s organic. YESSSS. You could also do gingerbread houses- I feel like you’re mom of the year if you do gingerbread houses. I was lazy & got store-bought cupcakes. Sugar cookies could be festive too. Whatever! You do you.

♡ CANDLES/MUSIC/CHIPS:

Candles because always candles. I’m obsessing over Ralph Lauren’s holiday scented candles. I cannot get enough really. The holiday scent is my favorite & the pine is a close second. Remember: you set the tone of a gathering with the scene. Music too though! Play the Candy Land soundtrack OR throw on Michael Bublé- his hottie voice gets me every time & his holiday album is gold. Chips too! Because chips always! Salsa, guac, some spicy hummus; everyone loves chips. One you start eating them, you can’t stop- you know?

♡ PLAY THE GAME:

The kingdom of sweet adventures! Nothing cuter than something that takes us right back to our childhood. The game is such a fun touch for a Candy Land party. Especially if you have kids. They will LOVE it. Lay the board game out to keep it festive for the kiddos…or the adults. I mean I feel like if you’re on a champagne/candy buzz anything can happen. Plus, it’s like $12 bucks so YES PLEASE! To get you going, remember the characters from the game? Plumpy, Jolly, Gramma Nutt, Princess Lolly, & Gloppy- just to get you REAL excited.

If you haven’t guessed it from 2432048320984 social media posts: THANKSGIVING is around the corner.

Well, not around the corner actually- it’s like, EER tomorrow-ish.

Anyway, you know I like to leave everything to the last-minute which is totally why I texted my friend, Neda, & asked her ( well, begged her ) for some of her fiber-filled recipes!

We decided we would do a swap.

Before we get into that I feel like we need to do the back story. The back story IS, I actually met Neda on Instagram which is just fucking nuts if you think about it, right? We “met” & liked each other immediately. So one day I’m in New York, I have like 5 seconds left before my flight & I decide to grab a salad at a local hot spot, Cipriani, and maybe a Bellini if I have time? I mean apparently Hemingway loved a Bellini from Cipriani…SOOOOooo.

Ok, I’m in my sweat suit ( no literally, sweat suit ), hair up, no makeup, rags & all and I hear: “LAURYN?”

WELL SHIT, IT’S NEDA!

Naturally, she’s glowing, perfect & adorable while drinking a holiday gluten-free vodka with cucumber, mint, & jalapeno ( am I telling the story right, Neda? Help me out, if not? ). So she proceeds to insist Michael & I sit down, hang out for a bit- YES PLZ. You know I like to chill. Of course he’s freaking because our flight is soon but I’m chill, relaxed, & about it.

As you can imagine, while I’m smiling because her energy is vibey & CHILL & VERY convincing, Michael is nervous about his flight time that’s 8384208 hours away. But who cares! He has a Bellini. He’s hanging out with Neda! He has a cucumber salad! All is good.

AND WAIT, you know I love a convincing woman.

Ideally one that can convince Michael. I mean any girl who can convince Michael to sit down & enjoy a cucumber salad while his flight is near is a down-ass chick in my book.

FOR THE RECORD: NEDA GOT HIM TO SIT DOWN & DRINK A BELLINI WHICH IS BIG.

Mission accomplished. 

ANYWAY.

So we lounge a bit, hang out, & I just FALL IN LOVE WITH NEDA. She’s perfect.

( We may or may not have spotted Leo…; ) is that another blog post? I feel it could be?…He was wearing a hat very low. ANYWAY! ).

Her blog is SICK AS SHIT, she’s beautiful, AND SHE IS NICE! But BOY is she a good healthy chef. I feel like I need to pick her brain for hours.

POINT: I shared my favorite Thanksgiving apple cider Brussels on her blog & SHE shared her gluten-free apple crumble on The Skinny Confidential. That’s right, get excited. Here’s what you HAVE to make for Thanksgiving, K? TA-DA:

Neda’s Gluten-Free Apple Crumble

FILLING

+ 1 tbsp coconut oil, for greasing ramekins

+ 1 1/2 organic Fuji apples, cut into small pieces

+ 1-2 tbsp raw honey

+ 1 tsp cinnamon

CRUMBLE

+ 1/4 cup gluten-free oats

+ 1 GG cracker, chopped

+ 1/4 cup raw walnuts, chopped

+ 1/3 cup raw coconut oil, melted

+ 1 tbsp coconut sugar

+ directions: pre-heat oven to 350 F & lightly grease ramekins. In mixing bowl, combine apples, honey and cinnamon. Distribute evenly on bottom of ramekins. Combine all the crumble ingredients in a bowl & stir until mixed.

Spread crumble mixture over apples and bake for 25-30 minutes, until golden. Garnish with coconut yogurt or vanilla ice cream. Even mint leaves are fun here too. Enjoy! Serves 4…yes please!

If you don’t know what fruit roll-ups are, have you lived?

I mean Gushers, Dunk-a-Roos, Capri Sun, Rippin’ Berry-Berry Fruit By The Foot were on repeat when I was a kid. Isn’t this everyone else’s childhood memories? I feel like orange soda & Lunchables were everywhere too. So crazy to think about…my how things have changed.

In regards to fruit roll-ups you remember the old slogan: “Real fruit and fun, rolled up in one.”

Except they were NOT JUST real fruit. The fun was a bunch of added bullshit like: corn syrup, dextrose, cottonseed oil, citric acid, sodium citrate, acetylated monoglycerides, fruit pectin, malic acid, ascorbic acid, natural flavors, and artificial colors.

SUSPICIOUS, NO?

If I’m eating something that’s 3 feet long ( insert sex joke ), that’s going to stain my tongue, it better be good…& contain simple ingredients. Which is why I’m sharing this EASY, QUICK, DIY, Fruit By The Foot à la TSC Style for ya:

TSC MANGO/STRAWBERRY FRUIT BY THE FOOT:

3 cups washed stemmed organic strawberries
1/2 mango, in chunks
1-2 tablespoons of raw manuka honey
A few squeezes of lemon
A little water

1. Preheat the oven to 250°F & line a large baking sheet with parchment paper.

2. Place the strawberries, mango, & raw honey ( with a few teaspoons of water ) in a blender & puree until smooth.

3. Pour the mixture onto the baking sheet lined with paper and spread it into a large rectangle with the back of a spoon or spatula making sure that the mixture is spread completely even.

4. Bake for 2 to 3 hours, until the fruit leather is dry and not sticky to the touch. Remember, cooking times will vary depending on how thick you spread your mixture and how much water is naturally in the fruit.

Also, every oven is different, so the cooking time may be less than 2 hours if your oven tends to be hot ( my oven was 1 hour & 20 minute-ish ).

5. Allow the fruit leather to sit and cool to room temperature. It takes several hours ( like 6 to 8 hours ) for the fruit to soften up; when you first take the leather out of the oven the edges will be a bit dry and crisp, but if you allow it to sit overnight it softens up nicely.

6. Use a knife, pizza cutter, or kitchen shears to cut the fruit leather into 8 long strips, keeping the paper on the back. Roll the leather into “roll-ups.”

+ I put the tray in the freezer for a few minutes too so it was perfect. The fruit leather will keep for at least a month in a covered container.

GUYS make sure if you make this you have patience- it takes a LONG time to form into a fruit roll-up. Try not touch it, just let it chill for like 8 hours. The longer you let it sit, the better. Also right out of the oven it doesn’t look cooked- don’t worry, it will form perfectly after those 8 hours.

If you’re feeling crazy you can also cut out fruit roll-ups. If you’re wondering, there’s a HUGE DIFFERENCE between Fruit By The Foot & fruit roll-ups. Fruit By The Foot is long, thin, & rope-like while fruit roll-ups are a wide, small, & square. They’re very similar but I prefer Fruit By The Foot because it’s compact & for some reason it feels like you’re eating more.

I literally carried these in my handbag to LA, the office, & today to Vegas. They ARE SO GOOD. I will always have them on hand for a sweet treat because they’re QUICK to grab. The perfect sweet treat & you know the lowdown on the ingredients. And of course if you have kids fruit roll-ups are so ideal to have on hand.
